Hot Weather Meal Solutions Needed

I haven't been camping for years, but I'm taking the kids late this summer to an outdoor Christian Rock festival where we'll have electric hookup, but grilling is not allowed. Do you have any good camping recipes for meal preps indoors without heating up the place?

I really like couscous.  If you boil water in a kettle or the microwave you add it to the couscous,let it sit for ten minutes covered and then fluff with a fork.  At the same time, I like to add butter, cooked chicken onions and red pepper which I have cooked at home and refrigerated or raisins or dried cherries and slivered almonds.

I think it's a very good idea to look at Mediterranean and middle eastern cuisine (such as couscous) for meals in hot weather. So far we've avoided cooking indoors except using the excellent convection/microwave oven for fear of messing up the insides. So we use a Coleman griddle outside which has proved to be a wonderful experience.
I remember taking a weekend break in a Bedford Debonair in UK many years ago to the Lake District. The first night we cooked fish. The rest of the weekend we could smell fish!!! Perhaps that's a tip on what not to do?

I cook quite a bit of Mediterranean and middle eastern food in the rv.  I also use a small electric cuisinart rice cooker.  It has a steamer so you can do the veggies and rice at the same time.  I often bake in the convection oven, but must admit that I am a bit intimidated by the grill option in the oven.  Does anyone use the grill much?
